LewisandClarkTrail.com in conjunction with the Lewis and Clark Festival
in Yankton, South Dakota, announces that this year’s Bison-tennial will
be featured on Food Network's All- American Festivals. The program will highlight the "Great Plains
Bison-tennial Dutch Oven Cook-off" on August 28th and 29th, 2004.
When Lewis and Clark’s Corps of Discovery entered the Great Plains and
feasted on their first buffalo, they prepared it in big iron pots.
Although the cooking utensils have changed somewhat, Dutch Oven Cooking
is essentially the same as it was 200 years ago.
This year the Cook-off has been extended over two days to give both
novices and Dutch Oven pro’s the opportunity to compete. Saturday August
28th is for novices with a one-pot cook-off format; Sunday August 29th
is for the Pro’s with a 3-pot sanctioned IDOS cook-off format.
The Chief Food Judge is Mr. Edward Quinlan of CAMP CHEF.
Mr. Quinlan is a certified judge by the National Barbecue Association
and the International Dutch Oven Society. On the evening of August 27th
an outdoor cooking demonstration will be hosted by Mr. Quinlan.
Dutch Oven cooking is a national phenomenon that combines the cuisine of
the yesterday with today. This is a grand occasion to experience an
historic form of cooking and learn a few new tricks and recipes from
Dutch Oven pro’s.
Season your Dutch ovens, test your recipes, and prepare yourself for a
food-filled week-end!
